Nshima and Relish

Our family has grown a love for nshima and relish since we have moved to Zambia. Nshima is the staple food of Zambia and many other African nations. It is "mealie meal" or cornmeal that is cooked in boiling water and made into this soft substance. The taste really must be acquired but when accompanied by a good relish it is a meal that is filling and healthy! Lily and Easton devour this dish! Just wanted to share with you all a little piece of Zambia. In this picture we brought back Ufa Woyera from Malawi and it is a finer grain mealie meal than Zambia.


Zambians consider anything that you eat with nshima "relish". This relish is a "rape" (basically collard greens) relish. The greens are cooked in oil, then tomatos, onions, and salt are added. This is Joy's favorite relish. Many Zambians will also use cabbage instead of rape.


Zeria is showing you how they use the nshima as the spoon or fork to eat the relish! Kids love this because they get all messy!
